Fruit Diet


Fruit diet - scientific studies in the United States show that, weight for weight, it is the most nutritious of all commonly eaten fruits – high in Vitamin C, potassium, magnesium, dietary fibre and anti-oxidants, low in calories, sodium and fat, and a good source of folic acid and Vitamin E. Take one every day the easy way – slice and scoop, peel and munch, or slice and add to all sorts of food. ZESPRI™ GREEN Kiwifruit is always great to eat and safe to eat.

Chicken Salad with ZESPRI™ Kiwifruit


What you will need

¼ cup each: olive oil, red wine vinegar
1 tablespoon Dijon mustard
1 clove garlic, minced
1 teaspoon chilli powder
½ teaspoon each: ground cumin, oregano
125g (4 oz) can diced green chillies
2 cups shredded cooked chicken
1 cup sliced spring (green/scallion) onions
2 litres (quarts) torn Romaine lettuce
1 cup coriander (cilantro) leaves
4 ZESPRI™ GREEN Kiwifruit
1 cup cherry tomatoes, halved
1 cup pitted ripe olives

What to do

Combine the oil, vinegar, mustard, garlic, chilli powder, cumin, oregano and green chillies in a large mixing bowl. Blend well.

Add the chicken and spring onions. Cover and refrigerate 2-3 hours for flavours to blend.

At serving time combine the Romaine lettuce and coriander in large serving bowl. Peel and slice ZESPRI™ Kiwifruit. Toss lettuce mixture with chicken mixture, ZESPRI™ Kiwifruit, tomatoes and olives.

Serves 6-8
