Chicken Salad with ZESPRI Kiwifruit
What you will need
¼ cup each: olive oil, red wine vinegar
1 tablespoon Dijon mustard
1 clove garlic, minced
1 teaspoon chilli powder
½ teaspoon each: ground cumin, oregano
125g (4 oz) can diced green chillies
2 cups shredded cooked chicken
1 cup sliced spring (green/scallion) onions
2 litres (quarts) torn Romaine lettuce
1 cup coriander (cilantro) leaves
4 ZESPRI GREEN Kiwifruit
1 cup cherry tomatoes, halved
1 cup pitted ripe olives
What to do
Combine the oil, vinegar, mustard, garlic, chilli powder,
cumin, oregano and green chillies in a large mixing bowl.
Blend well.
Add the chicken and spring onions. Cover and refrigerate 2-3
hours for flavours to blend.
At serving time combine the Romaine lettuce and coriander
in large serving bowl. Peel and slice ZESPRI Kiwifruit.
Toss lettuce mixture with chicken mixture, ZESPRI Kiwifruit,
tomatoes and olives.
Serves 6-8
