Kiwi pavlova

​Serves 6 - 8

Ingredients

  • 3 egg whites
  • Pinch of salt
  • 3 tablespoons water
  • 1 cup caster (superfine) sugar
  • 3 tablespoons cornflour (cornstarch)
  • 1 teaspoon vanilla essence (extract)
  • 1 teaspoon white vinegar
  • 2 cups cream, beaten and sweetened
  • 3 Zespri® SunGold Kiwifruit, peeled and sliced


Directions

  1. Preheat the oven to 190°C (375°F)
  2. In a large stainless steel bowl, add the egg whites, salt and water. Whip until stiff. Slowly add the sugar while whipping, then sift in the cornflour, add the vanilla and vinegar
  3. On a non-stick baking sheet or waxed paper, shape the mixture into an 18 cm (9 in) round and 5 cm (2 in) high disk. Place in the oven and turn off. Leave for 6 – 8 hours
  4. Remove from the oven. Decorate with cream and Zespri® SunGold Kiwifruit slices
