Tiki Chicken Skewers with Zespri® SunGold Kiwifruit Marinade

​Ingredients

Tiki Chicken Skewers

  • 1 pound chicken breast, skinless and boneless, cut into bite-sized pieces
  • 1 Zespri® SunGold Kiwifruit, peeled and chopped
  • 2 tablespoons bottled teriyaki marinade
  • 16 bamboo skewers
  • 1 tablespoon vegetable oil

Zespri® SunGold Kiwifruit Sweet and Sour Dipping Sauce

  • 3 Zespri® SunGold Kiwifruit, peeled and chopped
  • 3 tablespoons sugar
  • 1 tablespoon white vinegar
  • 2 teaspoons corn starch
  • ¼ teaspoon salt

Directions

Tiki Chicken Skewers

  1. Purée Zespri® SunGold Kiwifruit and teriyaki marinade in food processor until smooth. Do not crush Zespri® SunGold Kiwifruit seeds by over-blending. Place chicken in medium bowl.
  2. Pour marinade over chicken and refrigerate for 30 minutes.
  3. Soak skewers in water for 10 minutes. While chicken is marinating prepare Dipping Sauce
  4. Arrange chicken on skewers. Preheat grill to medium-high and brush with oil
  5. Grill chicken for 5 minutes on each side until cooked through

Zespri® SunGold Kiwifruit Sweet and Sour Dipping Sauce

  1. Purée Zespri® SunGold Kiwifruit in food processor until smooth; do not crush kiwifruit seeds.
  2. Place all ingredients in small sauce pan over medium-high heat. Bring to boil, stirring constantly, for one minute until thickened
