- 250g peeled Zespri Green Kiwifruit
- 60g white sugar
- 50g rum
- 300g carbonated citrus drink
- 4 limes
- Fresh mint
- Crushed ice
In a blender, combine the Zespri Green Kiwifruit with the rum and set aside.
Divide the sugar, mint and chopped limes between each of the serving glasses. Using a mortar, taking care not to break the glasses, crush the limes to release the juice and mix well with the mint leaves until the sugar is partially dissolved.
Add the blended rum and Zespri Kiwifruit to the glasses, mix well and fill with a generous amount of crushed ice. Top up with the carbonated drink.
The carbonated drink can be substituted for ginger ale, soda water or fizzy water. The quantities of rum and sugar can also be adjusted to suit individual tastes.
