ZESPRI® GREEN Kiwifruit Ice Cream


Serves: 6

Ingredients



  • 6 large ZESPRI® GREEN Kiwifruit
  • 150 g (5 oz) caster (powdered / superfine) sugar
  • 3 eggs (separated)
  • 1¼ cups cream, whipped

Directions


 

1. Peel and mash the kiwifruit – leave some pieces lumpy. Stir in half the sugar and stand for 15 minutes
2. Beat the egg yolks and remaining sugar over hot water, until thick and creamy. Cool
3. Beat the whites, until stiff. Fold the yolks then the whites into the fruit together with the whipped cream. Freeze quickly
4. Store in an airtight container in the coldest part of the freezer
