ZESPRI® GREEN Kiwifruit and Lime Ice Cream

Ingredients



  • 8 whole eggs, separated
  • 225 g caster (or superfine) sugar
  • 450 g ZESPRI® GREEN Kiwifruit, pulped
  • 500 ml cream
  • 2½ ml lime juice

Directions


 

1. Whisk the egg whites until stiff. Add the caster (or superfine) sugar and whisk for 1 minute
2. In another bowl whisk cream, until just firm
3. Beat the egg yolks and add to the whites, fold into the cream and ZESPRI® GREEN Kiwifruit pulp. Add the lime juice
4. Put mixture into ice cream machine, or place into freezer and every 1 – 2 hours until frozen whip the mixture until it feels firm to the touch
