ZESPRI® GREEN and GOLD Pancakes

Ingredients
Pancakes
- 1 cup (125 g) flour
- 2 tablespoons sugar
- 2 eggs, lightly beaten
- ¾ cup (175 ml) milk
- 1 tablespoon oil
- Butter or margarine for frying
Topping
- 3 – 4 ZESPRI® GREEN Kiwifruit
- 3 – 4 ZESPRI® GOLD Kiwifruit
- 4 – 5 tablespoons maple syrup, option
- Finely grated rind of 1 lemon or orange
Directions
1. To make the pancakes, sift the flour into a bowl and add the sugar
2. Combine the eggs, milk and oil and add to the dry ingredients. Pour into a jug
3. Heat a small, heavy frying pan over medium heat. Add a knob of butter and swirl to coat the base and sides of the pan
4. Pour about ¼ cup of the batter into the pan and swirl to cover the base. Cook until golden, about 1 minute each side
5. Remove from the pan and repeat, until all the mixture is used. Makes about 12
6. To prepare the topping, peel and cut the ZESPRI® GREEN and GOLD Kiwifruit in thick chunks or wedges
7. Pile in the centre of the pancakes and top with maple syrup (if using) and citrus rind. Excellent with yoghurt or whipped cream
