Kiwifruit Jelly Cubes


Ingredients



  • 4 tablespoons powdered gelatin
  • 300 ml (11 oz) hot water
  • 500 g (1 lb) sugar
  • ¼ teaspoon citric acid
  • 2 ZESPRI® GREEN Kiwifruit, peeled and puréed
  • Green food colouring
  • Caster sugar

Directions


 

1. Place the gelatin, water and sugar in a heavy based saucepan and stir over a gentle heat until dissolved
2. Add the citric acid and puréed ZESPRI® GREEN Kiwifruit. Boil for 20 minutes
3. Remove from the heat and cool for 15 minutes. Add a tiny amount of food colouring and stir in. Pour into a 20 cm (8 in) square cake tin lined with non-stick baking paper. Leave to set for 24 hours
4. Cut in cubes with a sharp hot knife. Roll in caster sugar before serving
