Puff Pastry with ZESPRI® GREEN Kiwifruit
Serves: 6
Ingredients
- Frozen puff pastry
- 2 egg yolks
- 200 g (7 oz) sugar
- 200 g (7 oz) butter, softened
- 2 lemons
- 4 ZESPRI® GREEN Kiwifruit
- 300 g (11 oz) strawberries
- 2 tablespoons powdered gelatin
Directions
1. Thaw the pastry, accordingly to the instructions on the wrapping. Roll out with a rolling pin
2. Pre-heat the oven to 200°C (400°F). Grease a 23 cm (9 in) oven-proof plate with better and line with pastry. Bake for 15 minutes
3. Mix the egg yolks with the sugar. Add the butter, juice and grated rind of the lemons
4. Stir the mixture on low heat, until thick. Pour into the pastry. Cool
5. Peel and slice the ZESPRI® GREEN Kiwifruit. Wash and slice the strawberries. Arrange rows of strawberries and ZESPRI® GREEN Kiwifruit alternately on the puff pastry
6. Dilute the gelatin with tepid water and apply a thin layer to the strawberries and the ZESPRI® GREEN Kiwifruit
