Kiwi Streusel Cake

Ingredients
Topping
- 50 g (2 oz) butter
- 2 teaspoons ground cinnamon
- ½ cup brown sugar
- ½ cup coarsely chopped walnuts
Cake
- 1½ cups flour
- ¼ teaspoon salt
- 2 teaspoons baking powder
- 1 teaspoon baking soda
- ¾ cup sugar
- 125 g (4 oz) butter, chopped
- 2 eggs
- ½ cup milk
- 1 teaspoon vanilla essence (extract)
- 3 ZESPRI® GOLD Kiwifruit
Directions
1. Pre heat the oven to 180°C (350°F). Lightly grease and line a square, 20 cm (8 in) cake pan
2. To make the topping, combine the butter, cinnamon and sugar in a food processor and process, until smooth. Add the walnuts and continue processing, until finely chopped
3. Place to one side
4. To prepare the cake, place all the ingredients except ZESPRI® GOLD Kiwifruit in the food processor in the order listed. Process until smooth
5. Peel ZESPRI® GOLD Kiwifruit and cut in 1 cm (½ in) cubes. There should be about 1 cup of diced fruit. Fold into the cake mixture
6. Spread into the prepared pan and sprinkle with the topping. Bake for 50 minutes
7. Excellent served warm with whipped cream
