ZESPRI® GREEN Kiwifruit Brown Rice Salad

Ingredients



  • 1 cup brown rice
  • 2 ZESPRI® GREEN Kiwifruit
  • 1 apple
  • ½ cup finely sliced celery
  • ½ cup red pepper (capsicum) strips
  • ½ cup toasted walnut pieces
  • ¼ cup finely sliced spring (green / scallion) onions
  • 2 tablespoons chopped parsley
  • 2 tablespoons sherry vinegar
  • 2 tablespoons olive oil

Directions


 

1. Cook rice in water according to package directions. Drain and cool
2. Peel the ZESPRI® GREEN Kiwifruit and cut in 5 mm thick slices. Cut slices in half to form half circles. Core and dice apples in 1 cm (½ in) cubes
3. Toss rice, ZESPRI® GREEN Kiwifruit, apple, celery, red pepper strips, walnuts, green onions and parsley
4. Mix together vinegar and oil; drizzle over salad. Toss to mix well. Cover and refrigerate 1 – 2 hours, to allow flavours to blend before serving
