Kiwi Café Salad


Serves: 4

Ingredients



  • 125 g firm tofu
  • 1 teaspoon ground cumin
  • ½ teaspoon seasoned salt
  • 2 cloves garlic, crushed
  • 2 tablespoons (30 ml) olive oil
  • 3 – 4 ZESPRI® GREEN ORGANIC Kiwifruit
  • 8 black olives, pitted
  • 1 cup (60 g) toasted croûtons


Dressing

  • 1 tablespoon (15 ml) cider vinegar
  • 1 tablespoon (15 ml) olive oil

Directions


 

1. Drain the tofu and cut in 2 cm cubes. Dust with the cumin and salt and dot wit the garlic. Add the oil and mix well
2. Gently fry the tofu in the oil in a frying pan, until lightly coloured. Drain and cool
3. Peel and cube or slice the ZESPRI® GREEN ORGANIC Kiwifruit into a bowl. Add the tofu, olives and croûtons. Combine the dressing ingredients and sprinkle over the salad
