Chicken Prosciutto Salad with ZESPRI® GREEN Kiwifruit
Serves: 3 - 4
Ingredients
- 250 g (9 oz) chicken breast fillet
- 2 large peaches, stoned and sliced
- 4 ZESPRI® GREEN Kiwifruit, peeled and sliced
- 150 g (5 oz) feta cheese, chopped
- 1 small red onion, finely sliced
- 6 slices prosciutto
- 1 medium cos lettuce, washed
Dressing
- 200 g (7 oz) low fat natural yoghurt
- ¼ cup lemon juice
- 1 tablespoon whole seed mustard
- 1 teaspoon Dijon mustard
- 1 clove garlic, crushed
- Salt and freshly ground black pepper
Directions
1. Cook the chicken on a heated and oiled grill, barbecue or griddle, until browned on both sides and cooked through. Cool and thinly slice
2. Grill prosciutto until cooked. Cook and break into pieces. Combine salad dressing ingredients and whisk
3. In a large bowl, place the sliced chicken, peaches, ZESPRI® GREEN Kiwifruit, feta and red onion and toss gently. Arrange the cos lettuce leaves on a serving plate. Place the salad on top and drizzle with dressing. Crumble the prosciutto over the top and serve with a loaf of warmed crusty bread
