Chicken Salad with ZESPRI® GREEN Kiwifruit
Serves: 6 - 8
Ingredients
- ¼ cup olive oil
- ¼ cup red wine vinegar
- 1 clove garlic, minced
- 1 teaspoon chilli powder
- ½ teaspoon ground cumin
- ½ teaspoon oregano
- 125 g (4 oz) can diced green chillies
- 2 cups shredded cooked chicken
- 1 cup sliced spring (green / scallion) onions
- 2 litres (quarts) torn Romaine lettuce
- 1 cup coriander (cilantro) leaves
- 4 ZESPRI® GREEN Kiwifruit
- 1 cup cherry tomatoes, halved
- 1 cup pitted ripe olives
Directions
1. Combine the oil, vinegar, mustard, garlic, chilli powder, cumin, oregano and green chillies in a large mixing bowl. Blend well
2. Add the chicken and spring onions. Cover and refrigerate 2 – 3 hours for flavours to blend
3. At serving time combine the Romaine lettuce and coriander in large serving bowl. Peel and slice ZESPRI® GREEN Kiwifruit. Toss lettuce mixture with chicken mixture, ZESPRI® GREEN Kiwifruit, tomatoes and olives
