Roasted Corn and Zesty Kiwifruit Salad

Ingredients
- 1 tablespoon vegetable oil
- 1½ cups (250 g) whole kernel corn, fresh and frozen
- 1 small red onion, sliced
- 3 – 4 ZESPRI® GREEN ORGANIC Kiwifruit
- 1 red pepper (capsicum), seeded and diced
- 1 chilli pepper, seeded and diced
- 2 tablespoons (30 ml) lemon juice
- ¼ teaspoon seasoned salt
- 1 cup (180 g) cooked and drained cannelloni or pinto beans
Directions
1. Heat the oil in a large, non-stick frying pan over medium / high heat. Add the corn and cook, stirring occasionally, for 8 minutes, until browned. Place in a large bowl
2. Rinse the onion in icy water to remove any pungent flavours. Peel and cut the ZESPRI® GREEN ORGANIC Kiwifruit in 2 cm cubes. Add to the bowl with the remaining ingredients
