Kiwi Stir-Fried Chicken
Serves: 4
Ingredients
- 500 g (1 lb) boneless chicken
- 2 tablespoons cornflour (cornstarch)
- 1 teaspoon five-spice powder
- 3 tablespoons oil
- 1 clove garlic, crushed
- 1 red pepper (capsicum), thinly sliced
- 2 ZESPRI® GOLD Kiwifruit
Sauce
- 2 tablespoons balsamic vinegar
- 2 tablespoons water
- 1 teaspoon sugar
- 2 teaspoons cornflour
Directions
1. Slice the chicken into thin strips. Combine the cornflour and five-spice powder in a bowl, add the chicken and toss to coat. Place to one side
2. Heat 2 tablespoons of oil in a wok or fry-pan over high heat. Add the garlic and cook for 30 seconds. Stir-fry the chicken in batches, about 2 – 3 minutes until cooked. Drain on a paper towel
3. Wipe the pan clean, add a teaspoon of oil and heat. Stir-fry the pepper until crisp tender. Remove to one side
4. Peel and slice the ZESPRI® GOLD Kiwifruit in strips
5. Combine sauce ingredients and pour into the pan, stirring until thickened. Add the chicken and heat through. Add the pepper and ZESPRI® GOLD Kiwifruit and serve immediately
