Mesclun and Scampi Tails with Watermelon and ZESPRI® GREEN Kiwifruit
Serves: 4
Ingredients
- 400 g (14 oz) watermelon
- 12 scampi or Mediterranean prawns (gambas)
- Stock
- 4 ZESPRI® GREEN Kiwifruit
- 325 g (12 oz) mesclun salad
- 2 teaspoons French dressing with olive oil, lemon juice, salt and pepper
Directions
1. Cut the watermelon in thin sticks
2. Fry the scampi in a stock and peel them, keeping their tails
3. Peel the ZESPRI® GREEN Kiwifruit and cut them into half slices
4. Mix the mesclun salad with the dressing, arrange it in the middle of the plate and put the julienne of watermelon on top
5. Arrange the ZESPRI® GREEN Kiwifruit and the scampi tails alternately in a rosette
6. Add a few thyme twigs and dill for decoration. Serve very fresh
