Roast Duck and ZESPRI® GOLD Kiwifruit
Serves: 4
Ingredients
- 1 Chinese-roasted duck
- 4 ZESPRI® GOLD Kiwifruit
- ½ cup roasted, salted cashew nuts, chopped
- Watercress to garnish
Directions
1. Take the duck flesh off the bone, discarding any fat, and cut the flesh in bite-size pieces. Peel and cut the ZESPRI® GOLD Kiwifruit in chunks roughly the same size as the pieces of duck
2. Spear the fruit and pieces of duck on skewers
3. Put the skewers on a platter, sprinkle with the chopped nuts and garnish the dish with watercress
