Smoked Turkey Pasta Salad with ZESPRI® GREEN Kiwifruit
Serves: 6 - 8
Ingredients
- ½ cup white wine vinegar
- ½ cup olive oil
- 2 tablespoons Dijon mustard
- 2 teaspoons basil
- 1 large clove garlic, minced
- 1 package (225 g / 8 oz) spiral noodles
- 2 cups broccoli florets
- 2 cups sliced crookneck squash
- 3 ZESPRI® GREEN Kiwifruit
- 500 g (1 lb) smoked turkey, slivered
- 1 cup red pepper (capsicum) strips
- ½ cup sliced spring (green / scallions) onions
- ⅓ cup grated Parmesan cheese
Directions
1. Combine the vinegar, oil, mustard, basil and garlic. Mix well
2. Cook the noodles as package directs. Add the broccoli and squash and cook for at least 30 seconds. Drain
3. Pour dressing over the noodles, broccoli and squash and allow to cool
4. Peel and slice ZESPRI® GREEN Kiwifruit. Toss the turkey, red pepper, spring onions and ZESPRI® GREEN Kiwifruit with the past. Sprinkle with Parmesan cheese to serve
