Spiced Chicken with Kiwifruit Salsa
Serves: 4
Ingredients
- 1½ tablespoons ground coriander
- 1 tablespoon ground cumin
- 2 teaspoons celery salt
- 1 tablespoon garlic salt
- ½ teaspoon cayenne pepper, or to taste
- 1 teaspoon ground black pepper
- 4 skinless chicken breast fillets
- 2 tablespoons olive oil
- Salad leaves for serving
Salsa
- 3 ZESPRI® GOLD Kiwifruit, peeled and finely diced
- 1 green pepper (capsicum), deseeded and finely diced
- 1 small red onion, peeled and chopped
- 1½ tablespoons fresh coriander (cilantro) leaves, torn
- Juice of a lime
- Salt and freshly ground black pepper
Directions
1. Mix the spices and black pepper into a bowl. Mix the chicken in to the spice mix, cover the bowl and refrigerate
2. To make the salsa, place the ZESPRI® GOLD Kiwifruit, pepper and onion in to a bowl and stir. Add the coriander. Season and reserve
3. Heat the olive oil in a large pan and cook the chicken for 2 minutes on each side. Transfer to a baking dish and cook in a pre-heated oven at 200°C (400°F) for 20 minutes or until cooked through
4. Slice each chicken breast into thirds and serve with salsa and salad leaves
