ZESPRI® GOLD Kiwifruit Bellini
Serves: 4
Ingredients
- 2 ZESPRI® GOLD Kiwifruit, peeled
- 1 teaspoon caster (superfine) sugar
- 2 teaspoons Cointreau
- 1 bottle (750 ml) of chilled proseco or similar sparkling wine
Directions
1. Purée the first 3 ingredients in a blender, on a gentle speed to prevent crushing the seeds. Pass through a fine sieve to remove the seeds, then spoon the purée into 4 champagne flutes
2. Pour 2 tablespoons proseco into each flute and gently stir to combine, then gently pour on more proseco to fill each glass
3. Light and subtle, with a beautiful colour, this is a twist on the traditional Bellini
