Dr Gonzo's Kiwi Debauchery

Ingredients
Lemongrass Infused Gin
- 1 bottle (750 ml) gin
- 2 stalks lemongrass
Candid Kiwi Chips (optional)
- 1 cup water
- 1 cup sugar
- 6 ZESPRI® GREEN or GOLD Kiwifruit
Kiwi Debauchery Cocktail
- 1 ZESPRI® GREEN or GOLD Kiwifruit
- 1 lime, quartered
- 1 teaspoon sugar
- 2 oz lemongrass infused gin
- 2 oz passionfruit nectar
Directions
Lemongrass Infused Gin
1. Cut lemongrass in half lengthwise exposing inner leaves. Drop into bottle of gin and infuse for 72-96 hours, tasting as you go. The gin should be flavoured but not bitter from the infusion
Candid Kiwi Chips (optional)
1. Combine water and sugar bring to boil and simmer until dissolved; cool
2. In a shallow bowl slice ZESPRI® Kiwifruit, skin on, thinly and soak for 6-8 hours in sugared water. Lay kiwi slices on parchment lined baking tray and bake at 220F for 1 hour until crispy but not brown (still need to test). Remove and store in cool dry place
Kiwi Debauchery Cocktail
1. Cut ZESPRI® Kiwifruit in half and squeeze contents into cocktail shaker. Add three wedges lime and sugar. Muddle until juices are mixed and released from fruit. Add lemongrass gin, and passion fruit nectar. Shake all ingredients with ice and strain into ice-filled rocks glass
2. Garnish with candied kiwi chips and lime wedge
