Cocktail of Scampi with ZESPRI® GREEN Kiwifruit
Ingredients
- 2 cups water
- 1 onion
- 1 clove garlic
- 1 lemon
- 1 kg (2 lb) scampi (or large prawns / shrimp)
- 1 jar mayonnaise
- 1 tablespoon mustard
- 2 tablespoons of tomato ketchup (sauce)
- 4 ZESPRI® GREEN Kiwifruit
- ½ lettuce
- Salt
Directions
1. Boil the water for 15 minutes with onion, garlic and a slice of lemon. Add the scampi to this stock and allow to cook. Drain and peel the scampi
2. Add the mustard and ketchup to the mayonnaise and mix
3. Cut the lettuce up into very thin slices and use this as a basis for the plates or cups in which the dish will be served
4. Peel and dice the ZESPRI® GREEN Kiwifruit. Mix the fruit with the scampi and divide over the dishes
5. Apply the mayonnaise sauce to the dishes
