ZESPRI® GOLD ORGANIC Kiwifruit and Yoghurt Muffins

Ingredients
- 1 - 2 (150g) ZESPRI® GOLD ORGANIC Kiwifruit, peeled and diced
- 220g plain organic flour, sifted
- 2 ½ tsp baking powder
- ½ cup caster sugar
- 1/8 tsp salt
- 1 egg
- ¾ cup vegetable oil or rice bran oil
- ¾ cup organic yoghurt
Directions
1. Preheat oven to 180°C
2. Mix together flour, baking powder, caster sugar and salt
3. In separate bowl, mix together egg, oil and organic yoghurt. Pour wet ingredients into dry ingredients and add ZESPRI® GOLD Kiwifruit dices. Mix lightly
4. Line muffin tin with baking paper and add mixture. Bake for 20 – 25 minutes or until they turn golden brown
