ZESPRI® GREEN Kiwifruit and Onion Chutney

Ingredients
- 3 tbsp olive oil
- 2 large Spanish or Red onions, thinly sliced
- 1 fresh red chilli or 1½ tsp dried chilli flakes
- 1 tsp fresh rosemary, finely chopped
- 2 bay leaves
- 6 – 7 medium (600g) ZESPRI® GREEN Kiwifruit, peeled and diced
- 100g raisins
- 2 tsp ground coriander
- 400g dark cane sugar
- ¾ cup red wine vinegar
Directions
1. Heat oil in pan
2. Add sliced onions, chilli, rosemary and bay leaves to pan and cook for 15 – 20 minutes, or until onions are soft. Stir frequently
3. Add ZESPRI® GREEN Kiwifruit, raisins, coriander, sugar and vinegar to the pan. Bring to the boil slowly. Stir frequently
4. Reduce heat and simmer for approximately 1 hour, or until the consistency is thick and sticky. Stir occasionally
5. Remove bay leaves
6. Spoon into sterilized jars and seal. Leave to cool. Refrigerate
