ZESPRI® GREEN Kiwifruit Pancakes

Ingredients
- 2 cups pancake mix
- 1 cup milk
- 2 eggs
- ¼ teaspoon ground nutmeg
- 4 ZESPRI® GREEN Kiwifruit
- Powdered sugar for dusting
- Strawberry jam
Directions
1. Beat together baking mix, milk, eggs and nutmeg until smooth. Peel and trim ends from ZESPRI® GREEN Kiwifruit. Dice fruit and stir into cake batter
2. Spoon approximately ½ cup batter onto lightly greased, heated pan. Cook until edges are dry and bubbles appear. Flip pancakes and cook until gold brown
3. Arrange pancakes on serving plates. Sprinkle with powdered sugar and drizzle with strawberry jam
