Kiwifruit Jam


Serves: 7cups

Ingredients



  • 10 ZESPRI® GREEN Kiwifruit, peeled and mashed
  • ¼ cup lemon juice
  • 5 cups sugar
  • ¾ cup water
  • 1 package powdered fruit pectin

Directions


 

1. In a bowl, combine the ZESPRI® GREEN Kiwifruit, lemon juice and sugar. Stir to blend thoroughly. Stand 30 minutes
2. Meanwhile, mix the water and pectin in a small saucepan. Bring to full boil for 1 minute, stirring constantly. Stir into the ZESPRI® GREEN Kiwifruit mixture all at once. Continue stirring for 3 minutes
3. Immediately ladle into sterilised jars, leaving 1 cm (1/2 in) space at the top. Wipe clean with damp towel and cover with lids. Let stand at room temperature 24 hours, then store in the freezer. Jam will also keep fresh in the refrigerator up to 3 weeks
