Pan Seared Salmon with Kiwifruit Salsa

Ingredients
Kiwifruit Salsa
- 4 ZESPRI® GREEN Kiwifruit, peeled and diced
- 1 cup avocado, peeled, pitted and diced
- 1 cup papaya, peeled, seeded and diced
- ¼ cup red onion, diced
- ¼ cup cilantro, diced
- 2 tablespoons lime juice
- 1/8 teaspoon salt
Salmon
- 2 teaspoons light soy sauce
- 1 teaspoon honey
- ½ teaspoon minced garlic
- ¼ teaspoon ground ginger
- 1 teaspoon honey
- 6 (4 oz each) salmon fillets
- 1 tablespoon olive oil
Directions
1. Place all kiwifruit salsa ingredients in medium bowl and toss lightly; set aside
2. Preheat oven to 350ºF
3. Whisk soy sauce, honey, garlic and ginger in small bowl. Brush salmon fillets with soy sauce mixture
4. Preheat oil in large oven-proof frying pan over medium heat. Add salmon, flesh side down and cook 1 to 2 minutes until browned. Flip salmon and place frying pan in oven
5. Bake 8 - 10 minutes or until salmon flakes easily with fork. Serve with kiwifruit salsa
