Pineapple Boats with ZESPRI® GREEN Kiwifruit

Ingredients



  • 2 cups long grain rice
  • 1 chicken breast
  • 2 large pineapples
  • 3 apples
  • 6 ZESPRI® GREEN Kiwifruit
  • 300 g (11 oz) cheddar cheese
  • 1 jar cocktail sauce
  • 4 cups water
  • Olive oil
  • Salt

Directions


 

1. Bring 4 cups of water to the boiling point, including a pinch of salt and a dash of olive oil. Add the 2 cups of rice when the water is boiling and allow to boil for 20 minutes. Set aside
2. Cook the chicken breast in a large amount of water with salt. Then cut the fillet into pieces of about 1 cm (½ in)
3. Peel the ZESPRI® GREEN Kiwifruit and the apples and cut them into small pieces
4. Cut the pineapples length ways. Scoop out the contents and leave a 2.5 cm (1 in) thick shell. Cut the remaining flesh into small pieces
5. Mix the fruit and the pieces of chicken
6. As soon as the rice is cooked and set aside, rinse with cold water to separate the grains. Add the rice to the other ingredients and the jar of cocktail sauce. Mix carefully
7. Fill the pineapples with the mixture and allow to cool in the refrigerator. Serve cold
