Quesadillas with Kiwifruit Salsa
Serves: 4
Ingredients
Salsa
- 3 ZESPRI® GREEN or GOLD Kiwifruit
- 1 small tomato, peeled, seeded and diced
- 1 – 2 teaspoons diced green chillies
- 2 tablespoons thinly sliced spring (green / scallion) onion
- 1 tablespoon chopped coriander (cilantro)
- 1 clove garlic, crushed
- ½ teaspoon dried oregano
Quesadillas
- 8 flour tortillas
- 1 cup shredded tasty Cheddar cheese
Directions
1. Peel and dice ZESPRI® Kiwifruit
2. Combine the ZESPRI® Kiwifruit, tomato, green chillies, spring onion, coriander, garlic and oregano
3. Top 4 tortillas with even portions of cheese; top each with remaining tortillas
4. Cook quesadillas one at a time in a large frying pan over medium heat, turning frequently, until the cheese is melted
5. Remove from the frying pan, cut each quesadilla into quarters and top with ZESPRI® Kiwifruit salsa to serve
