Shrimp Cocktail with ZESPRI® Kiwifruit Guacamole

Ingredients
- 4 ZESPRI® GREEN Kiwifruit, peeled
- 1 avocado, peeled and pitted
- 1 tablespoon fresh key lime juice
- 1 medium yellow heirloom tomato, seeded and diced
- 2 ZESPRI® GREEN Kiwifruit, peeled and cubed
- ⅓ cup sweet onion, minced
- 1 tablespoon cilantro, chopped
- 1 clove (1 teaspoon) minced garlic
- 1 teaspoon sugar
- ½ teaspoon salt
- ½ teaspoon black pepper, ground
- 24 jumbo shrimp, cooked, 21 / 25 count
Directions
1. In a medium bowl mash 4 ZESPRI® GREEN Kiwifruit, avocado and lime juice, leaving some lumps. Stir in tomato, 2 cubed ZESPRI® GREEN Kiwifruit, onion, cilantro, garlic, sugar, salt and pepper
2. Spoon ⅔ cup into chilled martini glass and arrange 6 shrimp around rim. Serve immediately
