Shrimp Cocktail with ZESPRI® Kiwifruit Guacamole

Ingredients



  • 4 ZESPRI® GREEN Kiwifruit, peeled
  • 1 avocado, peeled and pitted
  • 1 tablespoon fresh key lime juice
  • 1 medium yellow heirloom tomato, seeded and diced
  • 2 ZESPRI® GREEN Kiwifruit, peeled and cubed
  • ⅓ cup sweet onion, minced
  • 1 tablespoon cilantro, chopped
  • 1 clove (1 teaspoon) minced garlic
  • 1 teaspoon sugar
  • ½ teaspoon salt
  • ½ teaspoon black pepper, ground
  • 24 jumbo shrimp, cooked, 21 / 25 count

Directions


 

1. In a medium bowl mash 4 ZESPRI® GREEN Kiwifruit, avocado and lime juice, leaving some lumps. Stir in tomato, 2 cubed ZESPRI® GREEN Kiwifruit, onion, cilantro, garlic, sugar, salt and pepper
2. Spoon ⅔ cup into chilled martini glass and arrange 6 shrimp around rim. Serve immediately
