Tropical Salad with ZESPRI® Kiwifruit Honey Dressing
Serves: 4
Ingredients
- 200 g bacon, rind removed (optional)
- 200 g asparagus
- 2 firm bananas
- 1 tablespoon lemon juice
- 1 buttercrunch lettuce, washed and dried and torn into bite-size pieces
- Half pawpaw, peeled, seeds removed and sliced into wedges
- 1 double smoked chicken breast (about 300 g), skinned and sliced
- 1 large ripe but firm avocado, halved and sliced
ZESPRI® Kiwifruit Honey Dressing
- 1 tablespoon salad oil
- 1 tablespoon lemon juice
- 1 teaspoon runny honey
- ¼ teaspoon salt
- Freshly ground black pepper to taste
- 4 ZESPRI® GREEN Kiwifruit
Directions
1. If using bacon, grill it until crisp, then cut into large pieces
2. Trim the asparagus and blanch 3 minutes in boiling water. Drain, refresh with cold water and pat dry. Cut into short lengths
3. Peel the bananas, slice thinly lengthwise and put them on a plate. Squeeze over the lemon juice and toss gently
4. To make the dressing, whisk the oil with the lemon juice, honey, salt and a little black pepper. Peel the ZESPRI® Kiwifruit. Slice one into rounds for garnishing and purée the rest. Add the puréed ZESPRI® Kiwifruit to the bowl of dressing and blend together
5. Arrange the asparagus, bananas, lettuce, pawpaw, chicken breast and avocado on a platter. Garnish with sliced ZESPRI® Kiwifruit, and the bacon if using, and spoon over the dressing. Serve immediately
