Zespri® Green Kiwifruit and Onion Chutney

Serves 1L

Ingredients

  • 3 tbsp olive oil
  • 2 large Spanish or Red onions, thinly sliced
  • 1 fresh red chilli or 1½ tsp dried chilli flakes
  • 1 tsp fresh rosemary, finely chopped
  • 2 bay leaves
  • 6 – 7 medium (600g) Zespri® Green Kiwifruit, peeled and diced
  • 100g raisins
  • 2 tsp ground coriander
  • 400g dark cane sugar
  • ¾ cup red wine vinegar

Directions

  1. Heat oil in pan
  2. Add sliced onions, chilli, rosemary and bay leaves to pan and cook for 15 – 20 minutes, or until onions are soft. Stir frequently
  3. Add Zespri® Green Kiwifruit, raisins, coriander, sugar and vinegar to the pan. Bring to the boil slowly. Stir frequently
  4. Reduce heat and simmer for approximately 1 hour, or until the consistency is thick and sticky. Stir occasionally
  5. Remove bay leaves
  6. Spoon into sterilized jars and seal. Leave to cool. Refrigerate
