
Nourishing Kiwi & Almond Salad

Ingredients:
2 Zespri™ Organic SunGold Kiwifruit
4 cups Mixed salad greens
15 roasted almonds (you can pan fry quickly if they are raw almonds)
6 baby tomatoes
6 asparagus
Method:
Steam or grill the asparagus. Whilst the asparagus is cooking, peel, then slice (or dice) the kiwi. Toss the Zespri™ kiwifruit together with the mixed salad greens and tomatoes. Add dressing ingredients to a jar or bowl. Mix then drizzle over the salad. Sprinkle the salad with the almonds and asparagus. Enjoy
DRESSING:
1 tbsp honey
4 tbsp olive oil
1 tsp whole-grain mustard
1 tbsp lemon juice (or 1 tsp vinegar)
pinch salt
