3 Zespri™ SunGold™ Kiwifruit, peeled, finely diced
½ banana, roughly chopped
½ cup milk
¼ cup plain Greek-style yogurt
1 cup wholemeal self-raising flour
1 Tbsp honey, plus extra to serve
20g butter, melted
Extra virgin olive oil, to drizzle
- Place one of the Zespri™ SunGold™ Kiwifruit into the jug of a high-speed blender, then add banana, milk, yogurt, egg, flour and honey. Blitz to make a smoothie.
- Heat a large frying pan over medium heat. Brush with a little butter and a little drizzle of oil. Spoon tablespoons of batter into the pan (cooking about 4 at a time), allowing room for batter to spread. Top each with a 2-3 pieces of remaining Zespri. Cook for 1-2 minutes until bubbles begin to appear on the surface. Flip and cook for a further 1 minute until golden. Repeat.
- Serve pikelets warm or at room temperature topped with remaining Zespri™ SunGold™ Kiwifruit and a drizzle of honey.
