INGREDIENTS
2 Zespri SunGold Kiwifruit, peeled and pureed
1cm thumb of ginger, finely grated
1 tsp sesame oil
2 tsp white balsamic vinegar
3 tsp lime juice
black sesame seeds, for topping
micro greens, for topping
12 oysters in their shells
METHOD
- In a small bowl, mix the kiwifruit puree, ginger, sesame oil, balsamic and lime juice.
- Spoon a teaspoon full of dressing over each raw oyster, then top with black sesame seeds and micro greens.
