1 Zespri™ SunGold™ Kiwifruit
3 balls bocconcini cheese
3 thin slices prosciutto di parma
Extra virgin olive oil, to drizzle
Salt and pepper, to season
Small pinch of dried chili flakes (optional)
Basil and parsley leaves, to garnish
- Thickly slice Zespri™ SunGold™ Kiwifruit to get three thick slices, discarding ends. Cut each slice into quarters.
- Slice bocconcini into quarters and tear each prosciutto slice into 4 pieces.
- Thread a piece of prosciutto onto a cocktail skewer, followed by a piece of bocconcini and Zespri™ SunGold™ Kiwifruit. Repeat with remaining prosciutto, bocconcini and Zespri™ SunGold™ Kiwifruit to make 12 skewers. Arrange on a serving plate.
- Drizzle with olive oil, season with salt and pepper, scatter with chilli if using, and finally garnish with herbs.
