
Zespri™ SunGold™ Kiwifruit Granola Tarts and Chia Pudding

INGREDIENTS
3 tbsp chia seeds
¾ cup milk of choice
1 tbsp maple syrup
1-2 Zespri™ SunGold™ Kiwifruit
1 ½ cups rolled oats
½ cup desiccated coconut
3 tbsp chia seeds
½ mashed banana
1/3 cup maple syrup
½ tsp cinnamon
Vanilla yoghurt
Zespri™ SunGold™ Kiwifruit
Hemp seeds
METHOD
- To make the chia pudding combine all ingredients apart from the Zespri™ SunGold™ Kiwifruit into a jar, shake and place into the fridge for at least an hour or overnight
- Preheat your oven to 180 degrees Celsius and grease a muffin tray well
- In a large bowl combine the dry ingredients then add the wet and stir to combine
- Divide mixture between muffin tray and use a small spoon to press down gently and up the sides
- Bake for 15-20 minutes or until golden brown, allow to cool
- While the cups bake remove the skins from the Zespri™ SunGold™ Kiwifruit and place them into a small blender, blend until pureed then add this to the chia pudding and stir
- Serve the granola cups with a spoonful of the yoghurt, chia pudding, extra Zespri™ SunGold™ Kiwifruit slices and a sprinkling of hemp seeds. Serve immediately
