1 Zespri™ SunGold™ Kiwifruit, ends and skin removed, finely diced
1 Tbsp oat milk
1 Tbsp extra virgin olive oil, light in flavour
2 tsp honey
2 Tbsp wholemeal self-raising flour
Dairy-free coconut yogurt and mint leaves, to serve
- Put half of the Zespri™ SunGold™ Kiwifruit in a microwave-safe mug or cup. Use a fork to roughly mash. Add milk, oil, and honey. Stir until combined, then stir in flour.
- Microwave on high for 55 seconds or until cake is springy and pulling away from the side of the mug or cup. Allow cooling for 1 minute.
- Serve with a dollop of yogurt, the remaining Zespri™ SunGold™ Kiwifruit, and a few mint leaves to garnish.
