
Zespri SunGold™ Kiwifruit Salsa with Roasted Salmon

INGREDIENTS
For the salsa
4 Zespri SunGold Kiwifruit
½ small red onion, finely chopped
1 red chilli, seeds removed and finely chopped
Small bunch of coriander, stalks removed and chopped
Juice of ½ a lime
For the salmon
2 lemons, sliced thinly
2 red chillies
5 salmon fillets
Olive oil
Salt & pepper
METHOD
- Pre-heat the oven to 200°C.
- Make the salsa: Peel the Kiwifruit and dice. Add to a small bowl along with the red onion, red chilli, coriander and lime juice. Stir until well combined and set aside.
- Line a rectangle banking tray with baking paper and arrange the sliced lemons. Slice the two chillies lengthways and place on the baking tray.
- Lie the salmon fillets on top of the lemon slices, drizzle with olive oil and season with salt and pepper.
- Roast in the oven for 15-20 minutes until the salmon is cooked through and flaking. Spoon over the Zespri SunGold Kiwifruit salsa and serve immediately.
