INGREDIENTS
2 avocados (450 g)
1 Zespri™ Green kiwi
1/2 cucumber (100 g)
1/2 spring onion (50 g)
3 tablespoons pomegranate seeds (30 g)
1 lime (50 g)
Salt (5 g)
Pepper (5 g)
A few coriander leaves and/or parsley sprigs
METHOD
- Peel the cucumber and kiwi and dice along with the onion. Put the dice in a large bowl and add the pomegranate seeds. Season with salt and pepper and sprinkle with the lime juice and chopped herbs. Mix well.
- Cut the avocado in half, remove the stone and sprinkle it with lime juice. Fill each half with the vegetables and fruit and serve.
