Fresh-fruit salad with Zespri Green kiwifruit and custard

INGREDIENTS
- 2 Zespri Green kiwifruit
- 100 g raspberries
- 1 apple
- 1 pinch of cinnamon
For the custard:
- 1/2 l milk
- 4 egg yolks
- 50 g brown sugar or agave nectar
- 30 g cornstarch
- 1 piece of lemon peel
METHOD
- In a pot, bring milk to the boil with lemon peel then remove from the heat and take out the lemon peel.
- Beat the egg yolks with the brown sugar or agave nectar and the cornstarch with a whisk and then add the milk. Stir and pour back into the pot to cook on low heat, without stirring, until it thickens.
- Pour the custard into 4 ramekins or dessert glasses and chill until ready to serve. Peel and dice the Zespri Green kiwifruit and the apple. Mix the fruit and put it on top of the custard. Sprinkle with cinnamon and serve.
