Gazpacho-style with kiwifruit smoothie

INGREDIENTS
- 400 g ripe tomatoes
- 3 Zespri SunGold kiwifruit
- 1 small sweet onion
- 50 g baby leaf spinach
- 1 tablespoon hemp seeds
- 2 sprigs of basil
- ½ clove of garlic
- 8 ice cubes
- 40 g raw hazelnuts
- Salt
METHOD
- Score the bottom of the tomatoes in a cross and blanch them in boiling water for 40 seconds. Plunge straight into ice cold water and then peel off the skin.
- Peel and roughly dice the Zespri kiwifruit. Cut the tomatoes into 4 sections, remove the seeds and blend them with the kiwifruit, spinach leaves, hemp seeds, peeled onion, basil leaves, garlic, hazelnuts and a pinch of salt. Add the ice cubes and blend again. Top with the hemp seeds.
- Serve in glasses.
