Griddle cakes with oats, chia seeds and Zespri Green kiwifruit

INGREDIENTS
40 g rolled oats
160 g whole wheat flour
1 and 1/2 teaspoons baking powder
30 g sugar
1 tablespoon chia seeds
3 tablespoons water
200 ml vegetable milk
80 g plain yoghurt
40 g melted coconut oil + 1 teaspoon
Serve with:
4 Zespri™ Green kiwifruit
4 tablespoons agave nectar or maple syrup
1 tablespoon desiccated coconut (optional)
METHOD
- Soak the chia seeds in water for 20 minutes.
- Combine the whole wheat flour, rolled oats and baking powder in a bowl. In another bowl, combine the chia seeds mixture, milk, sugar, yoghurt and melted coconut oil (40 g). Add the flour and baking powder mixture and whisk.
- Heat a heavy frying pan, skillet or griddle greased with 1 teaspoon coconut oil. Using a ladle, pour the batter in, making 2 or 3 cakes, 6 or 7 cm in diameter. Let them cook for one minute, until small bubbles pop on the surface, and then flip with a spatula. Cook the hotcakes for 1 minute more.
- Remove and keep warm under a clean tea-towel. Repeat with the rest of the batter.
- Serve warm with syrup, sliced Zespri™ Green kiwifruit and a bit of desiccated coconut and chia seeds on top.
