INGREDIENTS
1 kg Zespri™ Green kiwis
15 g fresh ginger
250 g brown sugar
Half a lemon
1 teaspoon agar (5 g)
METHOD
- Chop the kiwis into large pieces and put them in a frying pan. Add the peeled, chopped ginger and lemon juice and cover with the sugar. Mix well, cover with a kitchen cloth and leave to stand for at least two hours, and if possible, all the night.
- Boil the ingredients and cook over low heat for 45 minutes, stirring frequently. Remove the foam with a spatula. In the meantime, boil the jars and their lids for 5 minutes and drain.
- Add the agar at the end of the cooking time. Pour the jam into the jars while they are still warm and fill them to the brim. Clean the threads of the jars, close firmly and put them upside down for 10 minutes. Store in a cool, dark, dry place.
- Serve with toasted wholemeal bread.
