Matcha chia pudding with Zespri Green kiwifruit

INGREDIENTS
- 4 Zespri Green kiwifruit
- fresh mint leaves
- 25 g chia seeds
- 400 ml almond milk
- 1 sprig fresh mint
- 1 tablespoon matcha
- 1 tablespoon honey, agave nectar or sweetener
- 2 tablespoons chopped walnuts (40g)
METHOD
- Warm the almond milk with the mint leaves in a pot for a few moments then remove from the heat and leave to cool. Strain and mix the milk with the chia seeds, matcha and honey. Whisk and then pour into 4 glasses and leave in the refrigerator to cool for 1 hour or overnight to firm up.
- Peel and dice the Zespri kiwifruit. Combine them with the chopped mint leaves and sprinkle over the chia pudding. Top with the walnuts.
