INGREDIENTS
- 100 g spinach
- 2 Zespri Green kiwifruit
- 100 g cooked haricot beans
- 1 avocado pear
- 20 g raisins
- 30 g walnuts
- 4 tablespoons lemon juice
- 2 tablespoons olive oil
- 1 tablespoon honey
- pepper
- low sodium salt
METHOD
- Mix the olive oil with the lemon juice, adding a pinch of salt and pepper. Peel and dice Zespri Green kiwifruit. Peel and slice the avocado.
- Place the spinach leaves on the bottom of a serving dish. Arrange the haricot beans, diced kiwifruit, slices of avocado, raisins and walnuts. Add the dressing and serve.
