INGREDIENTS
155 g nuts (100 g shelled almonds, 55 g chopped walnuts)
1 Zespri™ Green kiwi
1 Zespri™ SunGold™ kiwi
30 g dried cranberries
35 g dark chocolate chips
5 g cinnamon powder (1 teaspoon)
3 g ground ginger (1/2 teaspoon)
15 g butter
2 egg whites
5 g liquid stevia
METHOD
- Preheat the oven to 160º C.
- In a clean, dry bowl, whisk the egg whites to stiff peaks.
- Peel and dice the kiwis and mix with the cranberries, nuts, chocolate, stevia and spices in a second bowl. Stir in the softened butter.
- Fold in the stiff egg whites and mix gently until everything is well combined.
- Pour the mixture into a 33 × 23 cm rectangular baking tin lined with baking parchment. Smooth with the back of a spoon.
- Bake for about 15-20 minutes. Remove and leave to cool completely (at least 15 minutes) before turning out onto a board.
- Cut into even sized bars with a sharp knife.
