Zespri Green kiwifruit, mozzarella and basil ciabatta

INGREDIENTS
- 4 Zespri Green kiwifruit, peeled and sliced
- One ripe tomato, halved
- A little olive oil
- 250g buffalo mozzarella, sliced
- 20 basil leaves
- Sea salt
- Black pepper
- 4 ciabattas
METHOD
- Halve the ciabatta.
- Rub the tomato halves over the inside of the halved ciabatta.
- Fill the bottom parts of the ciabatta with mozzarella and season with salt and pepper.
- Continue to fill with basil and Zespri Green kiwifruit.
- Sprinkle a dash of olive oil and cover with other halves of ciabatta.
- Wrap in baking paper.
