- 6 Zespri Green kiwifruit, peeled and chopped into large pieces
- 1 cucumber, washed, patted dry and cut into ribbons
- 1 bundle of fresh coriander, coarsely chopped
- 1 red Spanish chilli pepper, de-seeded and finely chopped
- Juice and grated zest of a lime
- 100ml extra virgin olive oil
- Mixed lettuce leaves
- Salt and black pepper
- Mix the Zespri Green kiwifruits, cucumber, coriander and lettuce in a large bowl.
- Make a simple vinaigrette of lime juice, grated lime zest, olive oil and chilli pepper. Season with salt and pepper.
- Mix the vinaigrette with the salad and arrange on four plates.
Tip: a little feta cheese or goat’s cheese is perfect with this.
